Christmas Biscuits
(These are so delicious that we would not be surprised if they are all gone before you get round to handing them on the tree!)
These look lovely as stars but you can be as creative with the designs as you would like to
50g (2oz) Light soft brown sugar
50g (2oz) Softened butter
A small egg
115g (4 1/2oz) Plain flour
15g (1/2oz) cornflour
1 teaspoon of ground mixed spice
Hard clear bolied sweets
Some pastry cutters (star, xmas trees, etc)
A skewer
A small round cutter slightly bigger than the sweets
Preheat the oven to 180C 350F or gas mark 4
- Using a wooden spoon cream the sugar and butter together.
- Break the egg into a seperate bowl. beat it well with a fork.
- Mix half of the beaten egg into the sugar and butter mixture a little at a time- be carefull that it does not curdle. (you can throw the other half of the egg away)
- Sift the flour, cornflour and mixed spices through a sieve. Mix everything together really well with a wooden spoon.
- Using your hands press the mixture together and make it into a ball.
- Flour and area of work surface and roll the ball out until it is about 5mm (1/4 inch) thick.
- Grease and line a flat baking tray and using the cutters press out your Christmas shapes.
- Use your skewer to make a hole at the very top of the shape.
- Use the smll cutter to make a larger hole in the centre of your shape. Make sure it is bigger than the sweet.
- Pop a sweet into the middle of each shape. Put the tray into the oven (you will need a grownup for this).
- Bake in the oven for 12 minutes or until the buscuits are goldn brown. leave them on the baking tray until they are cool.
- Tie beautifully shiny ribbon through the small holes in the top and hang on your tree.
